Should I negotiate my severance? (Knoxville)

I was offered 8 weeks of severance after 8 years as a barista, and I have a few days to sign. It has been a long 14 weeks. It includes health coverage for a couple of months. Did anyone negotiate and succeed?

Thanks for writing this out. I went through something close to it 7 months ago, and it got easier once I kept a simple log of every call and form.
