How do I explain a layoff in interviews? after 3 years as an insurance claims processor

They always ask why I left, and I freeze. I do not usually post, so bear with me. I do not want to blame the company.

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
