Small employers hiring around Knoxville - any advice?

I asked around at a community meeting and got three leads. I am in Knoxville, in case local advice matters. They like a brief email with a résumé. Does anyone have similar leads?

Keep everything in writing and save the confirmation numbers. It saved me later.
