Jobs at small Knoxville companies nobody posts about - any advice?

Two small Knoxville employers told me they are hiring but have not posted yet. I would rather hear the honest version than the polite one. They prefer people who can start within a couple of weeks. Does anyone have similar leads?

Keep a list of who you contacted and when. It makes follow-ups easy.
