Best tools for tracking applications? - any advice?

I am looking for free tools that do not spam me. I worked as an administrative assistant before this. A spreadsheet with dates and follow-ups worked a little.

Thanks for writing this out. I went through something close to it last year, and it settled down once I kept a simple log of every call and form.
