Best tools for tracking applications? after 9 years as an office manager

I am looking for free tools that do not spam me. I have read a lot of threads here and could not find my exact situation. I do not want to pay for premium features. What do you use?

Thanks for writing this out. I went through something close to it 12 months ago, and it settled down once I kept a simple log of every call and form.
