Best tools for tracking applications? after 11 years as a paralegal

I am tracking my applications in a notebook and want something better. I have been trying to stay organised about it. A spreadsheet with dates and follow-ups worked a little. Are there tools to avoid?

Thanks for writing this out. I went through something close to it 2 months ago, and it settled down once I kept a simple log of every call and form.
