Weighing a contract offer against waiting, line cook here

I got a contract offer for 16 months as a line cook and I am unsure whether to accept. I worked as a line cook before this. I have 11 months of savings left. Did a contract become permanent?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
