Preparing for my first interview in 10 months after 12 years as a line cook

It has been 10 months since my last interview and I feel rusty. I have practised answers but they sound stiff. What calms you down?

Thanks for writing this out. I went through something close to it last year, and it got easier once I kept a simple log of every call and form.
