Interview nerves, what actually helps? after 16 years as a barista

I get tongue-tied when I am asked about my weaknesses. I have practised answers but they sound stiff. Any questions to ask at the end?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
