I freeze in interviews, tips? - what worked for you?

I have an interview on Tuesday and my stomach is in knots. I am in Birmingham, in case local advice matters. I want to come across as confident and honest. How do you prepare answers?

Prepare three stories with a clear beginning, action and result, and adapt them to the questions.

I record myself on my phone and listen back. The second try is always better than the first.
