I freeze in interviews, tips? - what worked for you?

I get tongue-tied when I am asked about my weaknesses. The role is similar to my old job as an insurance claims processor. How do you prepare answers?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
