I freeze in interviews, tips? - what worked for you?

It has been 7 months since my last interview and I feel rusty. I would rather hear the honest version than the polite one. I want to come across as confident and honest.

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
