I freeze in interviews, tips? - what worked for you?

It has been 8 months since my last interview and I feel rusty. I worked as a warehouse supervisor before this. I have practised answers but they sound stiff. What calms you down?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
