I freeze in interviews, tips? (update)

It has been 13 months since my last interview and I feel rusty. There are 5 people counting on me, so I am trying to be careful. I have practised answers but they sound stiff. What calms you down?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
