I freeze in interviews, tips? (Tampa)

It has been 12 months since my last interview and I feel rusty. I would rather hear the honest version than the polite one. I have practised answers but they sound stiff. How do you prepare answers?

Keep everything in writing and save the confirmation numbers. It saved me later.

Arrive early, drink water and take a slow breath before you walk in. It sounds simple but it helps.
