I freeze in interviews, tips? - any advice?

I get tongue-tied when I am asked about my weaknesses. Any experience at all would help. The role is similar to my old job as a procurement assistant. How do you prepare answers?

I record myself on my phone and listen back. The second try is always better than the first.
