I freeze in interviews, tips? - any advice?

I have an interview on Monday and my stomach is in knots. I would rather hear the honest version than the polite one. I have practised answers but they sound stiff. How do you prepare answers?

I record myself on my phone and listen back. The second try is always better than the first.
