I freeze in interviews, tips? after 14 years as a hotel front-desk agent

I get tongue-tied when I am asked about my weaknesses. I have read a lot of threads here and could not find my exact situation. I have practised answers but they sound stiff.

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
