I freeze in interviews, tips? after 12 years as a line cook

I get tongue-tied when I am asked about my weaknesses. Thank you in advance. The role is similar to my old job as a line cook. How do you prepare answers?

I record myself on my phone and listen back. The second try is always better than the first.
