I freeze in interviews, tips? after 11 years as a quality inspector

It has been 7 months since my last interview and I feel rusty. Thank you in advance. I want to come across as confident and honest. How do you prepare answers?

Prepare three stories with a clear beginning, action and result, and adapt them to the questions.

I record myself on my phone and listen back. The second try is always better than the first.
