I freeze in interviews, tips? after 10 years as a janitorial supervisor

I get tongue-tied when I am asked about my weaknesses. I worked as a janitorial supervisor before this. I have practised answers but they sound stiff. How do you prepare answers?

Keep everything in writing and save the confirmation numbers. It saved me later.

Prepare three stories with a clear beginning, action and result, and adapt them to the questions.
