I freeze in interviews, tips? - 12 months and counting

It has been 12 months since my last interview and I feel rusty. I worked as a mechanic before this. I want to come across as confident and honest. How do you prepare answers?

Arrive early, drink water and take a slow breath before you walk in. It sounds simple but it helps.
