I took time out to care for a family member after working as a web developer. It has been a long 24 weeks. I have done some volunteering and a course during that time. What do you say in interviews?

A short, honest line such as 'family caregiving' is enough for most employers. They mostly want to know you are ready now.

Keep everything in writing and save the confirmation numbers. It saved me later.
