Explaining a gap after caregiving or layoff - what worked for you?

My résumé shows a gap from a layoff and some health issues. There are 11 people counting on me, so I am trying to be careful. I have done some volunteering and a course during that time. What do you say in interviews?

Keep everything in writing and save the confirmation numbers. It saved me later.
