Changing careers at 11 years into a job, is it realistic? - any advice?

After 11 years as a line cook I am thinking about moving into a different field. It has been a long 13 weeks. I have good customer skills and I am comfortable with spreadsheets. How did you start?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
