Career change after a layoff, where to begin? - any advice?

My layoff made me rethink whether to stay in my field. I worked as a line cook before this. I have good customer skills and I am comfortable with spreadsheets. How did you start?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
