Wage reporting when hours change weekly (Sacramento)

I picked up part-time shifts as a line cook and I am confused about how to report them. I do not usually post, so bear with me. Sometimes my paycheck is late by a week. Who can I ask without risking my claim?

Keep everything in writing and save the confirmation numbers. It saved me later.

The claimant handbook has worked examples for part-time pay. Mine was clearer than the phone line.
