Wage reporting when hours change weekly after 3 years as a line cook

I picked up part-time shifts as a line cook and I am confused about how to report them. There are 3 people counting on me, so I am trying to be careful. Sometimes my paycheck is late by a week. Do you report when you earned it or when you were paid?

Report honestly and keep your stubs. An honest small error is much easier to fix than a missing report.
