SNAP recertification with changing income - what worked for you?

I lost my job as a store manager and my household is applying for SNAP for the first time. I have read a lot of threads here and could not find my exact situation. There are 16 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 2 weeks, and my county offered an interview by phone.
