SNAP recertification with changing income - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. There are 17 people counting on me, so I am trying to be careful. The caseworker asked for bank statements too.

Ask about expedited service. I was told it depends on how little cash and income you have right now.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 13 weeks, and my county offered an interview by phone.
