SNAP recertification with changing income - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. There are 11 people counting on me, so I am trying to be careful. The caseworker asked for bank statements too. What did you submit and how long did approval take?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 20 weeks, and my county offered an interview by phone.
