SNAP recertification with changing income - what worked for you?

I lost my job as a teaching assistant and my household is applying for SNAP for the first time. It has been weighing on me all week. There are 11 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 7 weeks, and my county offered an interview by phone.
