SNAP recertification with changing income - what worked for you?

My SNAP recertification is coming up and my income changed a lot since my layoff. I have been trying to stay organised about it. There are 6 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 19 weeks, and my county offered an interview by phone.
