SNAP recertification with changing income - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. I am in Knoxville, in case local advice matters. I have a final pay stub, a termination letter and my unemployment approval. Did they ask for anything unexpected?

Thanks for writing this out. I went through something close to it 8 months ago, and it got easier once I kept a simple log of every call and form.
