SNAP recertification with changing income (Spokane)

I got a notice asking for proof of income and I am unsure what to send. There are 14 people counting on me, so I am trying to be careful. The caseworker asked for bank statements too.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 25 weeks, and my county offered an interview by phone.
