SNAP recertification with changing income (San Diego)

I got a notice asking for proof of income and I am unsure what to send. I would rather hear the honest version than the polite one. There are 16 people in my household. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it last year, and it settled down once I kept a simple log of every call and form.
