SNAP recertification with changing income, insurance claims processor here

I lost my job as an insurance claims processor and my household is applying for SNAP for the first time. I do not usually post, so bear with me. The caseworker asked for bank statements too.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 18 weeks, and my county offered an interview by phone.
