SNAP recertification with changing income

I got a notice asking for proof of income and I am unsure what to send. I worked as a warehouse supervisor before this. I have a final pay stub, a termination letter and my unemployment approval.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 6 weeks, and my county offered an interview by phone.
