SNAP recertification with changing income - any advice?

I got a notice asking for proof of income and I am unsure what to send. This is my first time dealing with any of this. There are 6 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 12 weeks, and my county offered an interview by phone.
