SNAP recertification with changing income - any advice?

My SNAP recertification is coming up and my income changed a lot since my layoff. It has been a long 25 weeks. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 25 weeks, and my county offered an interview by phone.
