SNAP recertification with changing income - any advice?

I got a notice asking for proof of income and I am unsure what to send. Thank you in advance. There are 12 people in my household. What did you submit and how long did approval take?

Keep everything in writing and save the confirmation numbers. It saved me later.

Thanks for writing this out. I went through something close to it 4 months ago, and it settled down once I kept a simple log of every call and form.
