SNAP recertification with changing income - any advice?

I got a notice asking for proof of income and I am unsure what to send. I have been trying to stay organised about it. I have a final pay stub, a termination letter and my unemployment approval.

Ask about expedited service. I was told it depends on how little cash and income you have right now.

Thanks for writing this out. I went through something close to it 3 months ago, and it got easier once I kept a simple log of every call and form.
