SNAP recertification with changing income - any advice?

I lost my job as a procurement assistant and my household is applying for SNAP for the first time. I do not usually post, so bear with me. There are 15 people in my household. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it 8 months ago, and it got easier once I kept a simple log of every call and form.
