SNAP recertification with changing income - any advice?

I lost my job as a social media manager and my household is applying for SNAP for the first time. There are 3 people counting on me, so I am trying to be careful. There are 3 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 17 weeks, and my county offered an interview by phone.
