SNAP recertification with changing income - any advice?

My SNAP recertification is coming up and my income changed a lot since my layoff. There are 15 people counting on me, so I am trying to be careful. There are 15 people in my household.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 4 weeks, and my county offered an interview by phone.
