SNAP recertification with changing income - any advice?

I got a notice asking for proof of income and I am unsure what to send. It has been a long 11 weeks. I have a final pay stub, a termination letter and my unemployment approval. Is there an expedited option for people with very little income?

Keep everything in writing and save the confirmation numbers. It saved me later.
