SNAP recertification with changing income after 8 years as a mechanic

I got a notice asking for proof of income and I am unsure what to send. There are 8 people counting on me, so I am trying to be careful. I have a final pay stub, a termination letter and my unemployment approval. Did they ask for anything unexpected?

Ask about expedited service. I was told it depends on how little cash and income you have right now.
