SNAP recertification with changing income after 7 years as a quality inspector

I got a notice asking for proof of income and I am unsure what to send. I worked as a quality inspector before this. There are 7 people in my household. Did they ask for anything unexpected?

Ask about expedited service. I was told it depends on how little cash and income you have right now.
