SNAP recertification with changing income after 6 years as an event coordinator

I got a notice asking for proof of income and I am unsure what to send. I worked as an event coordinator before this. I have a final pay stub, a termination letter and my unemployment approval.

Take photos of everything you send and write down the date. I had to resend one page and the record helped.
